Carrot-Potato Masala

- 1 carrot ~ diced
- 2 potatoes ~ diced
- 3 garlic cloves ~ chopped
- 3 shallots ~ sliced
- 2 green chillies ~ sliced
- 1 sprig curry leaves
- a pinch of cumin seeds
- a pinch of mustard seeds
- 1 tbsp chilli powder
- 1/2 tbsp garam masala or curry powder
- 1/2 tsp turmeric powder
- sufficient water
- salt
- cooking oil
Method :~
- Heat oil in wok, saute cumin and mustard seeds till they pop! Add garlic, shallots, green chillies and curry leaves. Stir till fragrant.
- Add some water, chilli powder, garam masala, turmeric powder and salt. Give it a boil.
- Add diced carrots and potatoes, mix together and let it simmer under low flame for about 10 minutes or until potato is cooked.
- Now, stir once again and leave it for another 5 mins. Dish out.
